Shamrock Shake Bites

If you came of age in the 70s or even 80s – March is all about Shamrock Shakes from McDonald’s. Like Girl Scout Cookies, and the McRib, it isn’t around for very long so if you don’t make a special trip, you’re not going to get one.

I can’t remember the last time I had one. They look so good now, so much better than I was a kid when it was just a green shake with questionable flavor. Today it comes with whipped cream and a cherry on top – which makes everything better.

Still, I have fond memories of the Shamrock Shake and wanted to come up with a treat that gave me the same feelings, but with less calories and no ice cream headache. March in MN is usually pretty cold and snowy, which slightly lowers the appeal of an ice cold shake, no matter how good it is.

These shamrock shake bites are perfect for those who want just a bite or two of a sweet treat with a hint of mint and some wearing o’ the green.

While this recipe is not Keto Friendly, it could be. Using Lily’s chocolate and some Stevia or other sweetener is all you need to make these low carb.

These shamrock shake bites are easy to make, a hand mixer comes in handy, but you could do it using elbow grease. The green base of these bites is a meringue, while the topping is whipped cream with cream de menthe pieces mixed in. Simple, delicious and festive!
