I have a fantastic recipe for oatmeal cookies that was gifted to me by a dear friend’s mother when I got married the first time. She made the best cookies ever, but never gave out the recipe – so I have not shared this amazing oatmeal cookie recipe. However, the cookies come out soft, flat and oh so chewy or as she called them – delicate and lacy.

Apple Pie in a Jar is so easy to make – simply dice up some apples (1 apple per jar), and cook in a pan over medium heat until they start to sweat, sprinkle cinnamon and continue cooking until apples are soft. You can add a tablespoon of water to the pan to speed up the process if you like.
Crumble the oatmeal cookies and place in the jar as the bottom layer, add the apples and repeat the layers until the jar is full. Top off with some vanilla ice cream and a drizzle of caramel sauce (or maple syrup) and you have a delicious dessert that looks so lovely on the table!
