Tasty Cauliflower Pizza Crust – Keto Friendly

  1. Chop, rice or pulse cauliflower. I didn’t have access to my food processor so I simply chopped with a knife. You can also use a blender or buy it already riced. Place in microwave safe bowl and cover with a paper towel. Cook on high for 3 minutes and stir. Continue cooking at 2-3 minute intervals, stirring between each interval until cooked. Set aside to cool.
  2. While the cauliflower is cooling beat the three eggs together and grate your cheese. Once cauliflower has cooled enough press with paper towel to absorb any moisture that has been released from the cooking process.
  3. Add cheeses, Italian seasoning, salt and pepper and eggs to cooled cauliflower. Mix well until incorporated evenly.
  4. Take half the mixture and press onto parchment lined baking sheet. The thinner the better. If mixture still contains liquid you can press paper towel on it to absorb excess liquid.
  5. Bake in a 350°F oven for 10-15 minutes or until golden.
  6. Remove from oven and either cool to store in freezer or top with toppings and bake at 350°F until cheese is bubbly, about 10 minutes. If using a frozen crust bake at 400°F for 10 minutes.
