Classic 70s food in all it’s glory. A Swedish dish created by Ove Jacobsson. A delicious – yes, really delicious – dish of roasted chicken, chili cream sauce, bacon bits, Virginia peanuts and bananas.

Instructions
  1. Use the meat from a grocery store roasted chicken. Remove skin and bones and discard. Shred meat into bite size pieces and place in a oven proof casserole dish or baking dish.
  2. Sprinkle generously with Italian seasoning. *You can use curry powder in place of the Italian seasoning, but I’m Scandahoovian and we don’t live on the edge that way.
  3. Slice 3-4 bananas lengthwise and place on top of chicken.
  4. In a bowl whisk the whipping cream and chili sauce together. Pour over chicken and bananas. and bake at 435°F. *I know it’s weird temp, but that’s what the Swedes bake it at – something about going from °C to °F I am sure. Bake for 25- 30 minutes or until bubbling. Remove from oven.
  5. Sprinkle with bacon bits and peanuts and let sit for 10 minutes. Serve over rice or let it stand alone. Enjoy!
